Do not go so much deep into it. Keep it simple.

Gala Coordinator said that they need fountain or fountains [hence fountains is not an optional]
and a dessert fountain would be a lovely addition [a particular type of fountain is optional]

a dessert fountain is a sub-type of fountain that is optional but they must need a fountain or fountains.
